Yield: 20 small rolls
Bake time: 25-30 min
Ingredients:
400 g Spelt flour (we used regular all purpose and it was fine)
1 packet of dry baking yeast
80 mL of Orange juice (or any other juice)
80 mL lukewarm water
50 g Canola oil
1 pinch of salt
2 Tbsp Rice syrup (or other sweetener, optional)
100 g grated apple
100 g grated carrot
For garnish:
2 Tbsp raisins (can be omitted)
50 g dry rolled oats
Instructions:
1. Mix flour, yeast, juice, water, oil, salt, and optional sweetener in a bowl. Knead for a few minutes, until combined. Cover and leave in warm place for 30 minutes.
2. Knead the grated apple and carrots into the dough. Add optional raisins, if desired. Cover and leave in warm place for 1 hour.
3. Heat oven to 200ºC (~400ºF). If possible, choose the option to heat from above and below. Line a baking sheet with parchment paper. Form the dough into small balls by hand. Coat with oats and then place on lined baking pan. Bake for 25-30 min. When fresh, the rolls will be most. This changes in the following few hours. The rolls freeze well.
